The viral swamp soup, courtesy of @nachocookin on Instagram, has an ingredient list that reads like a homeopathic remedy, and while the name may sound unappetizing, it’s just a chicken soup with rice dressed up in green.
With plenty of spinach, this soup is sure to leave you feeling strong and fortified, just like Popeye.
Ingredients
2lbs Bone-in chicken breast or thighs
1 cup long-grain rice
1 tbsp fresh ginger
1 head of garlic
1 large yellow onion
2 bunches of spinach
1 bunch of cilantro
2 jalapenos (or 1 poblano pepper)
Celery
Olive oil
Salt and seasonings of your choice
Directions
Thoroughly season the chicken and coat the bottom of a deep pot with olive oil. Once hot, place your chicken in the pot and cook on both sides until a golden-brown color is achieved on each side.
Remove the chicken and add a whole minced onion. Cook until onion is translucent while scraping any bits of browned chicken from the bottom of the pan.
Add chicken back to the pot with 2 tablespoons of salt and fill with water just until the chicken is submerged. Allow to simmer for two hours.
In a separate pan, sauté the roughly chopped ginger, three stalks of celery and pepper (de-seeded) until charred and softened.
Remove items from the pan and put into a blender. Add all the spinach and cilantro and blend using a cup of stock from your pot.
Remove chicken from pot and allow to cool before shredding by hand.
Once the green mixture is thoroughly blended, add to the pot along with a cup of rice.
Allow about 30 minutes for the rice to cook and then add your shredded chicken.
Allow flavors to incorporate for about 15 minutes and serve.
Garnish with fresh cilantro, fresh jalapeno, a lemon wedge or any topping of your choosing.
Top off with a pinch of salt and a drizzle of olive oil.
